These are a few nasty super hot peppers I picked today to pose for photo's. These peppers will go into a sauce recipe this evening. There are 2 yellow Carolina Reaper variety's. Orange Bhuts. Yellow Bhuts. Bhut Orange copenhagen. Purple Thunder variant number 2 featured in these fotos. It doesn't get better than this in the super hot pepper world. I will prepare a simple but fantastic sauce recipe this evening. Notice the gloves? You have to wear gloves to touch or even wash these peppers. These peppers will make a nice yellow sauce. I plan to cut these pepper into chunks. Then I will puree them in the blender mixed with vinegar. I plan to just use my eye as far as how much vinegar goes in but it will probably be at least 3 cups. I want the puree to be watery looking. I will add 1 teaspoon of salt plus some garlic and onion and some sugar. Probably 2 or 3 spoons of sugar. Once I have pureed this real good I will transfer this to a pot and heat it over the stove for probably 15 minutes on low heat. Then let it cool. Once cooled I will transfer this mix into a larger container with a top and let this mix sit on the counter for a few days. Then, I will use a big strainer and pour this mix thru that to remove solids. Then I will jar it up and put this in the fridge. It should have a nice yellow color since the majority of the chili's are yellow. This will be spicey. Don't let this bother you or scare you. Start out with just a drop or two. It won't be long and you will add a little more. This type of pepper is so delicious that you won't believe it when you try it. Far and away more delicious than any other hot pepper that I have ever tried. The Carolina Reaper is extremely excellent. They have hyped it up but in this case I think it deserves the hype. A truly fine chili.

Super-hot peppers need a long season. They also like hot and humid. Obviously they also like the short day length but they are not day length sensitive. If you can start super-hots early and indoors you too can grow them. The time it takes to pick your first chili will vary. Mine took 4 to 4.5 months to produce the first chili pepper. The rainy season is not the best conditions for them. However, at the very least, all the peppers that have set, will ripen. I am not sure that the plants will produce a second harvest during this time of over-cast weather and continuous rain. Foliage on the plants is not looking the best now. The Purple Thunder Plants, which are the oldest plants are still looking the best and still producing peppers. I will keep experimenting.

Hello everyone, I have been busy making real hot sauce. I used the peppers in the previous photo plus other peppers from the garden. The yellow has a lot of Carolina reapers in it. Mixed with BOC and yellow Purple Thunder. The purple thunder peppers with the marmalade shading do not affect the color of the sauce much. The red sauce has a lot of Orange Chocolate Bhuts in it. All the peppers in the sauce are super-hot. The hot sauce is simple. I chopped up some garlic and onion. Peppers were washed and chunked out on the cutting board. I used white and darker colored vinegar. Using the blender I added lots of vinegar, about a quart for each color and puree'd the peppers and the garlic and onion. I added salt to taste which for me is about a slightly heaping teaspoon. I added sugar. A little bit of msg. Once blended I poured the entire concoction into a medium pot and boiled gently for about 15 minutes. I covered the pots with lids and let cool. They sat on the counter for 2 days. Then I strained the mixtures and bottled it up. I don't add much ingredients to my sauces or puree'd super-hots. Super hots stand on their own. My pepper harvest is not over either. The huge Purple Thunder plants still have tons of peppers on them plus they are making new peppers.

Oh, I meant to say this as well. If you like spicey food and you like hot sauce, this is the finest hot sauce that you can find anywhere. Since I can't let you taste it due to distance restrictions I have to toot my own horn. Its a natural product with very few ingredients. The quality of hot sauce depends pretty much entirely on the quality of the ingredients you use. I have used the finest super-hot peppers I can possibly use. It is very hard to enjoy lesser hot sauces once you get used to enjoying the real thing. And, yes, it is addictive. In Panama, good hot sauce cannot be bought. So it is worth it to grow the peppers and make it at home.
Tobasco sauce sucks.

My taste in hot sauce has evolved. Don't worry though, when I am over at your house I won't say anything about that Louisiana Hot sauce you got on the table. I used that for most of my life.

Hahaha. My Mother is from Louisiana and loves to put LA Hot sauce on her catfish sandwiches lol. She used to carry a bottle in the glove compartment, just in case. So yeah, you might just see a bottle on my table. Let me know when you're coming.

I like fried catfish. We don't have that here. A truck drove by today trying to sell fish. They only had Pez Vela. That is sail fish. Sail fish is not good to eat unless it is smoked. With this pandemic its not easy for me to get fish that I like. On my catfish I like to use cat-sup with horseradish and lemon juice. If you got that I will be over at your house tomorrow.

These are Purple Thunder variants. On the top row. Left is Purple Thunder Lava Red Middle is Yellow lava red Right is orange red. The bottom is the mystery plant. Also Purple Thunder. The mystery pods hanging around on the plant. Beautiful purple pods. Huge blocky pods. These will turn Lava Red Orange red pods. The plant is green and unripe pods are green. Also a purple thunder variant. Purple Thunder-yellow lava red pods. Vigorous plant. I have already decided to grow these out again and have planted 12 in starter pots. Parent plant was very vigorous and early producing. Huge blocky pods. Very shiny yellowish pods with a caramel reddish hue on them.

Interesting color variations Glen. They're all good looking, and I'm sure they pack a punch. The plant with the purple stems and pods is really pretty.

Rick, I will be putting together packs of seed to send out to my friends in a few weeks. You and George are on my mailing list so you will get some seed. The purple plant is a purple thunder variant and it is a beauty. Yes, they are all spicey. Bhut Jolokia or Ghost pepper kind of spicey. Not as hot as the Carolina Reaper. George, I plan to send you some Carolina Reaper seed. Its time for you to graduate and party with the big dogs like Rick and I. Don't worry, all these hot peppers are delicious and they add to your quality of life. And, beauty to your garden. There is nothing like super-hot peppers.

Those are beautiful peppers! To delete the double photo, go to "EDIT" in the upper right corner of your post, click it, then scroll down to the photo that you don't want, and place your cursor next to it on the right side of the photo, just like you would do to add a caption. Then, hit backspace. That should erase the photo. (At least that's how I delete mine).
