Can you turn them off when you are through, or are they a one shot deal?

These two are sort of a one shot deal. You can snuff out the flame to save fuel though. I generally just squirt about an ounce of alcohol in and light. Depends on what I’m cooking. The one on the left is made from a cat food can and has a simmer ring. The venom stove is all out flame. They are a blast to play with. Also great for emergencies when the electricity goes out. I have both homemade and ones I bought. I almost forgot to mention, both of these have built in pot supports, so all you do is light, and put your pot on them. Some of my stoves require some type of pot support. For example my Trangia requires a pot stand.
