Me and wife adapted a recipe to suit our taste. These are sort of a peanut butter cookie with a twist. 1/4 cup oat flour 1/4 cup chopped pecans 1/4 cup unsweetened coconut 1/4 cup lower sugar cranberries 1/2 cup coconut sugar 1/4 cup monk fruit or stevia sweetener 1 egg 1 cup natural peanut butter 1 tsp vanilla Mix all ingredients well, roll into balls, pat them into cookie shapes and place on a baking tray lined with parchment paper. Bake at 350 degrees for 10 minutes. Remove from oven, allow to cool for at least 5 minutes, then place on cookie grate to continue cooling. Once cooled, dip half of cookie in white chocolate mixture and place on parchment paper so chocolate will set up. White chocolate mixture 1/2 cup no sugar added white chocolate baking chips 1 teaspoon coconut oil Put in microwave a few seconds, stir, microwave a few seconds, stir. Continue until melted then dip cookies. A couple of notes. To make my oat flour, I just take some rolled oats and pulse in food processor. They don’t need to be ground fine like flour. I just pulse till they suit my taste. You don’t even have to use oat flour, I just added because I like oats. Cranberries are optional, I like them so I put them in. Recipe is very forgiving. If you just want peanut butter cookies, all you need is peanut butter, coconut sugar, egg and vanilla. Very simple! To call them Christmas cookies, we just jazzed them up a bit. Cookies before dipping in chocolate.

Thanks, for sharing that recipe. That sounds really good, sort of like granola only probably better because it's fresh and homemade.

Not super sweet. What I mean is they aren’t sickening sweet like some cookies. They are very satisfying though. Only problem is I can eat a toe sack full at one setting.
