Ron, that's fascinating. I hadn't heard that before. Somehow I managed to miss your response and forget about this thread until now. I've made acorn/corn/wheat bread (like corn bread but brown in color) several times since Christmas. I love it! I've fallen down on processing more acorns and the season is almost over. I love processing acorns. My limited experience tells me that the small ones are quite good. So far they've been my preferred "nut" to work with, but I recognize that I need some more years of experience before I can speak authoritatively on this matter. So far, my experience has been that the larger acorns are so much more prone to weevils and spoilage, that they aren't as efficient to work with as the smaller ones.
