I told her. She says she doesn’t know why it’s been such a good squash year for her, but she has been enjoying them. She says she has a bunch of butternuts that she just harvested yesterday since the vine has died.

I laughed when I read about I read about fried squash. When kids were young we would buy frozen fried squash at the store. My husband was fond of it. The kids were not. The table sat against a wall shared with the laundry room so there were often baskets of clothes nearby. My boys became experts at tossing that squash into my laundry baskets.
It sounds like you need a zoodler, Woodeye. Then you could sub zucchini shreds for pasta in spaghetti dishes. However I dought it freezes.

I had to research what a zoodler is, guess I'm kinda behind the times. I do have a Kitchen-Aid mixer.
I have a manual operating curly fry maker that I used to make Cucuzzi curly fries. I never tried that with zucchini.
True, my twice-fried squash probably still would have been laundry basket fodder for your boys...

woodeyeThey actually make pretty good noodles. IF you get the water off before adding the sauce. We put ours in a dry pan with a touch of olive oil till just al denti. Drain all that water and add sauce. Mind you now, it’s not noodles, but it’s still pretty good for a change. I don’t do mooshy squash, so we don’t cook them much, just enough to heat them.
