Folks, one of my favorite things when traveling, is to visit the local farmers' market and grocery stores to see what unique produce I can find. I'm seeing my brothers, who met in Maui and while here, I have done some scouting around concerning sweet potatoes. I purchased about 5 lb of unique roots my first day here, and am busily trying to eat them, as I discovered that no one else in my party will touch them
Here's a link to a post I did over on the Sweet Potato Network concerning Ube, which is a flavor derived from the Okinawa Purple variety of sweet potato. It started gaining popularity in the Philippines and has been spreading all over the Pacific Rim. It's really good!

I'm not sure why sweet potato ice cream sounds so unappetizing, while sweet potato pie sounds so good? Funny, how your brain catagorizes things that way.

Differing sweet potato varieties have different flavors. Ube is distinct. The closest I can come to it, in what folks in our neck of the woods would relate to, is kind of the "bubble gum flavor" of Beauregard, yet more subtle and with a much more dense, creamy texture. It was good, though, my next ice cream cone was a cookies & cream. My brothers wanted to go out for ice cream several times and I didn't want to put a wet blanket on things by abstaining. But now, I'll go back to "no ice cream except on rare occasions. It's too easy for me to put on excess weight.

Interesting how different folks perceive different flavors. I love Beauregard sweet potatoes, but the thought of bubble gum actually makes my stomach turn just a bit. I’m not sure I can come up with something to which to compare the sweet potatoes; it’s just that I wouldn’t have chosen that. They are sure sweet, though.
I added about three cups of sweet potato puree to a large batch of granola the other day. It took more time in the oven to dry out, but it really made a nice addition to the oats and seeds. It makes the breakfast a little heartier.

I tried some Ube ice cream today, macmex . It was really good. It was very mild, and this particular flavor was mixed with coconut, but it tasted quite nice. We have some very kind next door neighbors, and the husband is a retired Four Star General from the Air Force. He loves to fly naturally, and he took us today to his airplane hangar where he gave our family a tour of an airplane that he co-owns with another retired military friend, and a glider in which he flies. We also saw a lot of his memorabilia from his very long service in the armed forces. Afterwards, he and his wife took us out for ice cream (actually the first time that two of my children have ever had that experience), and I saw the Ube ice cream and knew I had to try it. I would not have know what it was except for my remembering this thread. It seemed particularly appropriate because these are the neighbors for whom I grew the Beauregard sweet potato slips.

I definitely enjoyed it, and I gave my kids tastes of it, too, and they all liked it. It was mild, I’d say, without much “zing” but a refreshing kind of mildness, rather than a boring one. I tend to prefer flavors that have lots of contrasts, and this one didn’t, but it was still very nice. I just thought it was really fun knowing that I was eating a beautiful lavender ice cream made from Okinawa purple sweet potatoes. That was probably the best part (and the cooling down after having worked all morning hammering hardware cloth along the side of a 30 foot shed and burying it under scrapings of dirt and rocks).

Yesterday I put in 9 slips of Okinawa. Been battling time to get stuff in the garden this year.
It felt good to get them planted. We'll see how they do this year. This one was definitely a hit with the family, for flavor and texture. It seemed to produce okay. This year will be a better test. Most growers report that Okinawa doesn't produce well on the Mainland.

I've got some form of purple sweet potatoes planted this year, but I forgot what variety Hank said they were. My wife's deer eats one or two sweet potatoes per day when she goes out to feed her each evening, so we go through a lot of sweet potatoes in a year's time, mostly Beauregard.
