Thanks for pointing back to that okra recipe. I was wondering if folks used dill with pickled okra or not. We love dill cucumber pickles as well as dilly beans, and I’ve got a good patch started off this season. It tends to peter out in the heat of summers down here, though. I had to grow some inside last year.
I remember last summer having two jars of pickles side by side in our “fermentation cabinet.” One had been started early in the week and was turning that dull olive drab color you mention about the broccoli. When I put the freshly started one in beside it, the second looked so bright and green and lovely that I commented to my oldest that though I loved the flavor of pickles, I sure liked the look of the fresh ones before they actually fermented. She had a nice reply, something along the lines of, “I like the olive-colored ones because that’s the color of deliciousness.”

In cooking, "To each his own." I use dill in my pickled okra recipe because I like dill. My daughter uses my Mom's recipe, but adds cloves; she says the cloves take away some of the 'bite' of the vinegar. My wife won't eat my daughter's pickled okra with cloves and visa~versa.
The trick is to find a base recipe and over the years, tweak it to your liking.

Hedgeapple, Thanks, for posting that. I like that color chart, that was a good idea. The month of May will be here before we know it, despite the fact that it has been below freezing here for most of the day and actually snowed this morning. Planting time is still just around the corner!

The month of May will be here before we know it, despite the fact that it has been below freezing here for most of the day and actually snowed this morning. Planting time is still just around the corner! I may hold off an extra week this year. My friend in Kansas City mowed his lawn on Saturday, and then had to shovel snow off his sidewalks on Monday, LOL.

Thanks for posting a picture of the kit, hedgeapple. The photo spread of okra pods just above the bloom bag, what does that illustrate? What are you supposed to be selecting for with that?
I haven’t even planted any okra in Texas yet. I could have, but we did have a little cooler spell this week, and I have the advantage of a very long growing season, so I don’t have to rush.

The card that came with the kit is a flyer for the Utopian Seed Project. I think what they are doing is amazing, and with the assistance of an army of volunteers it appears to actually be working. I agree that you should have plenty of time for okra in Texas. Seems like summer lasts until December there.

Thanks for the explanation. I just hadn’t understood what all those pods had to do with white okra, and now I see that they don’t really.
Summer was long last year, but thankfully it didn’t go all the way till December. It ended about a week earlier. We pulled our tomato and pepper plants on Thanksgiving and had to harvest hundreds of mandarin oranges all in one afternoon at the end of November to save them from a hard freeze.

That's amazing! As many okra seedlings as I've seen in my life, I've never actually looked at one up close like that before. What a miracle, that all of that comes from such a tiny seed. I will never cease to be amazed by things like that; how so many wonders seemingly spring forth from thin air, with nothing but earth, sunshine, and a little water to draw their entire existence from. With things like that happening every day, how could anyone not love gardening?
