Bon,
When I winnow seeds, I use an old box fan and a clean bed sheet. I experiment, using a few seeds at a time, to see how far away I need to set the box fan from the seeds I'm pouring in front of it, to make sure I don't lose more than just chaff. Once the distance is figured, I pour larger quantities to be winnowed. So far, that works really well. I winnow wheat seeds, sunflower seeds, roselle seeds, and okra husks. The fan blows the hollow seed hulls and husks away, leaving me with mostly good ones.

To Ol' Timer, Amaranth for me was similar basically providing two crops of seeds of almost equal quantity last year. To Global, that is a wonderful idea. I had a similar problem winnowing out the chaff.
