Good article, George. I've never seen huitlacoche on our corn here. I've heard of it, but always thought it was a Northern cornfield thing. Now, I'm looking forward to trying it someday.

Huitlacoche often appears where the soil is acidic and conditions are humid. I've seen it almost every summer, so maybe the variety of corn factors in. I never have much.
