Ever wish you could eat more economically, yet still have a healthy diet? Consider beans. In parts of our country people make fun of beans. In other, more educated zones, they are highly esteemed Beans are nutritionally “dense,” meaning they pack more nutrients into a small package than most other foods. They contain protein, starch, vitamins and minerals. They’re high in fiber and regular consumption of beans has been statistically shown to increase ones lifespan. Just a few are: 1) In chili 2) in soups 3) By themselves and served as a side dish My favorite way to eat beans is how I learned to eat them in rural Mexico: cooked simply with some salt, at little hot sauce sprinkled on top, and accompanied by some hot corn tortillas. But you’re not me. You might like them better another way. Here's a picture of my breakfast, a couple of days ago: black beans with hot sauce, fried egg with hot sauce and steamed lambsquarters. Do you have a favorite way to eat this healthy food?

I've been doing quite a bit out outdoor cooking in the Dutch Oven. Tomorrow I'm making a bean dish. I haven't tried this dish as it's just something that came to me while I was sitting in my easy chair. I have a pound of Mayacoba beans soaking tonight and I have 3 bags of beef jerky and plenty of charcoal. Now to decide if I want to go sweet or savory. I'm not a big fan of BBQ sauce in beans, so I probably won't float in that direction.
If I go savory, I'll take jerky, Jalapeños, Bell Pepper, Onion, Celery, and just let the beans make a thick rich soup. I might add some beef broth towards the last 1.5 hours of cook time and serve it with some Mexican style Cornbread.
If I go towards a sweet or baked bean, it will be tomato paste thinned with V8 & sweetened with coconut sugar, with some bell Pepper/Onion/Celery. Maybe a tway bit of Ketchup. Depends if I need something after tasting for seasoning. These will be cooked down so the sauce sticks to the meat and beans.
I rarely salt/season my beans until the last half hour of cooking.

Got a pot on, come sit by the fire and chat a bit. I decided to go Savory. I cooked 1.5 pounds of bacon, big ol Onion, Orange Bell Pepper, & Celery. Once browned into the beans it went along with a can of Rotel, A bag of beef Jerky, a bag of sausage snack sticks. Once done, a handful of "slap ya momma" seasoning.

Moose, you're making me hungry! My wife's away right now and I've been toying with the idea of making myself a big batch of beans. She has a health condition which makes beans a taboo for her. She loves them, but she can't have them. The only thing holding me back is that the only beans we have on hand are old, and they don't cook up well. I HATE to throw them away, yet, they are inferior eating. I'm waiting on my 2018 crop of dry beans, to resolve this issue!

macmex George, we do most of our cooking outside cause we live in a motor home and it's just too hot to try and cook. I've been cooking in Dutch Ovens since 2005 and to me they just can't be beat for flavor. It's probably my imagination, but food taste so good when it's cooked outdoors. I made a cake the other night and my Mom said it's the best one I've ever made and to be sure and write down the recipe. I put bananas, coconut, pecans in the case Mix, then I melted a tub of chocolate frosting over the top. It was sure good.

It's amazing how one can master a more primitive way of doing things and do it better.
We've pretty well ditched air conditioning, which is saying a lot in Oklahoma. Found a more primitive, better way, using our attic fan. It does help that our house is well constructed for insulation purposes and that we have some great shade trees in strategic places.
It is very satisfying to be creative and excel in cooking. My theory is that, to some degree, great flavor contributes to being healthy.
