My Wife just made some of the best fresh, uncooked, tomato juice I've ever had in my life!
It was so good, because she uses raw tomatoes, garlic, basil, and peppers, straight from the garden, then adds fresh squeezed lime juice. I commented, "Too bad you can't can that that for Winter."
(If you canned it, you'd lose the fresh flavor that you get from using uncooked veggies).
A few minutes later, she decided she would make up a big batch of it to freeze. I just now brought her a 27 pound basket full of fresh picked tomatoes, from the 280 pounds that I picked this week.
I just finished freezing 20 pounds of Boston Butt pork roasts that I've been smoking over pecan wood all day. We'll be eating like Kings again this Winter.
