I learned to eat kimchi when I was in seminary and had Korean neighbors. After a year in Mexico, I decided to learn how to make it. So, Glen, if you have a gallon jar and place to keep it in the refrigerator, I can send you a recipe. It's pretty easy, and, oh so good!

Thanx George. Problem is finding the ingredients. I used to occasionally make it in Florida. Hard to find the ingredients. The easiest way to make it is to buy kimchee base in a jar. The base has all the real ingrediants in it already. Can't buy anything like that here. If you can't find the base, it is important to use the correct type of dried pepper powder also. Koreans use a particular type of pepper. I can't even buy any type of pepper powder here, let alone the correct type. I have tried using different types such as chinese dried pepper and the flavor is just not the same. My home récipe uses pepper powder, ginger, sea salt, garlic, fish sauce and chinese cabbage. Real kimchee is much more complex than that. I guess thats why it costs so much. I miss it.
